Use This
2 cups organic beets (4 medium size beets), shredded
4 tablespoons Nutiva Hemp Oil
2 tablespoons Coconut Secret Raw Coconut Vinegar
1 tablespoon Food for Thought Cherry Honey Mustard
1 large clove organic garlic, minced
Do This
1. Combine oil, vinegar, mustard and garlic in a mini blender, food processor or bowl; mix well.
2. Pour dressing over beets; mix to evenly coat.
3. Dig in…or jar and let the flavors soak in for next day’s enjoyment.

I have to weigh in on this delish dish because not only is it really tasty, but it’s a great alternative for those who don’t like cooked beets. Preparing them this way reveals an entirely different characteristic of this under-appreciated root vegetable. And that color!!
Thanks. We’re not fans of cooked beets either so this is a great way to incorporate these nutrient rich jewels into your diet. The flavors just come together and make for a surprisingly good slaw. The beautiful color is full of antioxidants and anti-inflammatory molecules – so eat up!
If you haven’t already tried beet greens they’re delicious. Sauteed in a little butter and garlic served over polenta…mmmm!
