It’s been a busy day in the kitch’…160 pounds of Willow Wisp Organic Farm tomatoes to process. Last week, we processed 125 pounds and who knows how many pounds before that (I lost count).
What will we do with all these tomatoes you ask? Use them throughout the winter in soup, chili, rice dishes and more.
Tomatoes offer a healthy dose of vitamin c, fiber and potassium. Plus, let’s talk lycopene…”lycopene is an antioxidant which appears to prevent the formation of harmful by-products of metabolism called free radicals. Free radicals are thought to be responsible for damaging the body’s cells, as well as their genetic makeup, leading to certain chronic diseases.” Yes, please – sign us up!
Last but not least, you can preserve the tomato bounty of 2014 too!
- Get to the farmers’ market this weekend.
- Purchase 25lbs from an organic farmer (you should get 12-14 quarts of whole tomato).
- Wash all your tomatoes with lukewarm water and follow these instruction by Food in Jars.
Radical Homemaker Quick Tips…
I peel some, I leave some with skins. Peeling is one extra step and lots of folks swear that if you wiz them really good before using them, the skins will be plenty small enough to not matter. Plus, the skins boost the amount of lycopene. Oh, and the seeds…I keep those too – lots of nutrients in those babies 😉 I also hot water bathe my quarts for 40 minutes as I have a cookbook which suggests so.
