Coconut Milk from Manna

Sometime back in December, we decided to give up organic ½ and ½. It was a huge decision. I’ve been taking cream in my coffee for as long as I can remember. The impetus was Jen’s digestion issues. So, the big question became…are we going to give up coffee? The obvious answer (for us) was absolutely not. We had tried changing to hemp milk some time back but it tasted terrible. We love hemp milk but it’s just not right in coffee. So the next idea was coconut milk. Instead of buying yet another aseptic pack, I suggested to Jen that she try using the coconut manna from Nutiva to make coconut milk. After mentioning this to Kristine at Java Love Coffee Roasting Co., she immediately thought the fat in coconut milk would cut the acidity of coffee. It certainly does and the taste is outstanding. I would just like to say…Jen, thank you. Thank you for making sure I have a delicious cup every morning come rain or come shine. Love you!

Coconut milk is a great alternative to cow’s milk. Full of vitamins, minerals and lauric acid…the medium chain fatty acid that transforms into Monolaurin that strengthens the immune system and fights various diseases and viruses. The only other abundant source found in nature is from human breast milk.

Nutiva Coconut Manna is delicious on a slice of cinnamon raisin toast, straight off the spoon or when worked into soups, savories and sweets.

PLEASE READ…the coconut manna will spread easily at 72 degrees. When the manna is the consistency of frosting, you’re ready to make coconut milk. Use steps 1 and 2 if the manna is solid and below 72 degrees.

Use This
1 cup water (plus water to fill a medium pot)
¼ cup Nutiva Coconut Manna

Do This
1. Place closed manna jar in a medium size pot of hot water. Put on stove over low heat (avoid the start of a boil…you are looking to warm the manna not heat it).
2. Let manna jar sit until water has heated thoroughly. Gently unscrew the lid and have a peak. If the manna seems to be melting take it off the stove and carefully stir. You are looking for a frosting like consistency, if not reached put back into water.
3. Pour manna and water into a blender and mix. No blender, you can simply put in a jar and shake.
4. Use your delicious coconut milk in coffee or over granola. Store in a jar in fridge…will last a couple of days.

      We think you’d like it. It’s creamy and almost like having dessert built into your coffee.
