Apple Cider Donuts with Maple GlazeConfession: I used to eat Dunkin Donuts on a regular basis. At the beginning of my marketing career, I was in radio sales – on the road all the time and always in reach of a DD drive-thru. Medium coffee (light and sweet), a blueberry cake and sugar jelly donut – please and thank you. And, don’t even get me started about Munchkins – chocolate glazed – hands down!

Jump back to high school – the different clubs and classes sold Krispy Kremes every year – no joke, I could totally polish off one box, by myself, in one day. So, I was always sure to order at least three…

Then, there was my grandparent’s obsession with Entenmann’s – which including Gramp’s bi-weekly visit to the Entenmann’s discount store. Devil’s Food and Chocolate Glazed were a nightly favorite, accompanied by a tall cold glass of 2% conventional milk. And yes, I was always willing to settle for a powdered donut too.

It’s been over 7 years…not one crappy donut crumb has passed these lips and truth be told – I’m totally OK with that. I don’t make exceptions and I don’t pretend making an exception is OK. If I want a donut, I make them. It’s that simple.

So, to celebrate (the second) national Donut Day (first one is in June), and to steer you clear of the chemical laden, cheap garbage they call donuts, here’s a fantastic real food recipe you’ll love…

Apple Cider Donuts with Maple GlazeMaple Glazed Apple Cider Donuts
Gluten, Grain & Soy Free, Paleo Friendly
(dairy free when made with coconut oil)

Use This…
1/2 cup coconut flour, sifted
1 teaspoon cinnamon
1 teaspoon baking powder
1/4 teaspoon sea salt
2 large eggs, room temp
1/2 cup fresh apple cider, warmed
2 tablespoons grass fed butter or coconut oil, melted
3 tablespoons local-organic maple syrup

For the glaze…
2 tablespoons grass fed butter or coconut oil, melted
1/4 cup local-organic maple syrup
1/2 cup homemade confectioner’s sugar
1/4 teaspoon sea salt

Do This…

  1. Pre-heat oven to 350º. Grease a donut pan with grass fed butter, coconut oil or palm shortening – set to the side.
  2. Combine coconut flour, cinnamon, baking powder and sea salt in a small bowl – whisk gently to mix.
  3. Combine eggs, cider, butter and maple in a medium-size bowl – mix to combine.
  4. Add dry ingredients to wet, and mix until fully combined. Let “dough” rest for 2 minutes to thicken.
  5. Scoop dough into donut pan. Place in oven, bake for 15 minutes.
  6. While donuts are baking, make glaze. Simply combine all ingredients and whisk until fully blended. Set to the side.
  7. Remove donuts from oven and let rest 15-20 minutes. I like to put baked goods in front of a fan to cool – we’re much too busy and impatient 😉 Once cooled remove from pan.
  8. Carefully, dip the top of the donut in glaze (or drizzle glaze); plate and serve.

Of Note…
The donuts have a light and tasty sweetness. The glaze is super sweet! Depending on how sweet you like your donuts, go easy with the glaze or simply omit.
